For those of you who don’t already know, I’m incredibly kitchen challenged. I don’t know my way around a kitchen whatsoever and cooking is not in my skill-set. This is why microwaveable meals or no-bake meals are my best friend. Recently, I’ve been trying to work on eating a more balanced diet that isn’t cereal or a protein bar, but I’ve found my options to be pretty limited. Anything involving the oven or stove is completely out of the question for me. So, instead of attempting to master the mystery that is the oven/stove I decided to create a meal using the one appliance I have mastered; the microwave. Each morning, I make myself scrambled eggs in a mug in the microwave. Eggs are an excellent food to eat for breakfast because they are full of protein and help you stay fuller longer (no more mid-morning snacking). It is also perfect, especially if you have busy mornings because it’s easy and takes under 5 minutes to make. So, here’s my recipe for the perfect quick and easy breakfast option; eggs in a mug.
What you’ll need:
- 1 large microwave-safe mug
- Cooking spray
- 2 eggs
Step 1. Spray mug thoroughly with cooking spray
Step 2. Crack open two eggs into the mug
Step 3. Add 1/4 cup of milk
Step 4. Add any extra ingredients you may want to increase flavor
Step 5. Whisk all of the ingredients in the mug together
Step 6. Microwave mug on high for 3-4 minutes
Step 7. Allow the mug to cool
Step 8. Enjoy
